Why kitchen grease needs an overhaul, not another wash
Cooking vapour carries oil well past the hood. It lands on the coldest surface in the room, which is the coil, and it does not stay soft. That changes what cleaning can recover.

Grease behaves differently from dust
Dust sits on a surface and rinses off. Oil-laden vapour lands on the fin face and binds with dust into a sticky film, and every cooling cycle bakes that film a little harder. What starts as a wipeable layer becomes something bonded to the metal.
The second difference is depth. Dust mostly loads the face of the coil, where a brush can reach it. Grease is drawn through the full fin depth by the airflow, so it collects in the channels a surface clean never touches.
That combination matters. A general service can leave a grease-loaded coil looking acceptable from the front, while the airflow through it has already dropped a long way.

How to tell which one you have
Judge it by the interval between cleans, not by the coil's appearance. When the same service that once lasted a full year starts running out after a couple of months, the load has moved into the fin depth rather than sitting on it.
The second tell is the gap between cold air and weak air. A grease-loaded blower still delivers cold air, just not much of it, so the room stays warm while the vent feels chilled. A grease-bound coil produces the opposite: reasonable airflow that is not cold enough.
Ask for the blower wheel to be inspected specifically. It is behind the cover, it is not part of a general service, and in a kitchen environment it loads faster than the coil does.
When an overhaul is earned, and when it is an upsell
An overhaul is earned when the grease has bound through the fin depth, past what a wash reaches. On a unit near a cooking line that point arrives genuinely, and paying for repeated surface cleans instead is money spent on a layer that is not the problem.
It is an upsell when nobody has established depth first. A coil that has never had a proper chemical wash is not a candidate for an overhaul, because the cheaper option has not been tried. The order matters.
The honest sequence is filter, then blower, then chemical wash, then overhaul, with each step only taken because the one before it did not hold. Anyone recommending an overhaul on a unit whose blower has never been opened has skipped the diagnosis.
What reduces the load in the first place
Position is the largest lever and the hardest to change after fit-out. A return sited away from the cooking line collects far less than one drawing air across it, and that decision is made once.
After that, the interval. A unit in a kitchen environment needs a cadence set from running hours and proximity to the line, not the schedule a general contractor applied to the whole premises.
Filter discipline buys real time here, more than in a dry environment. Anything caught on the filter is not baking onto the fin behind it.
